I just would like to clarify, there is no such thing as the Illuminati. It is just a concept created by a group of people in order to keep people's mind occupied about something. The Illuminati concept is no different from the concept of God and the the Devil. In a way, these concepts keep people's minds busy and they are busy with things that are of no real interest. As the world is being watched, we are mostly consumed with issues of national pride, religion, race... Something is preventing us from seeing what matters in every day life. With that said, what we are really supposed to be preoccupied is health, fighting hunger, and ways to meditate to achieve enlightenment. But it is a certain fact, the majority of the media is not focused on none of these issues.
So who invented the idea of God and the Devil?
Well the answer is quite obvious. The idea of God and the Devil may not be true for other species like plants. They have a different order of reality. But man, from prehistoric times, have been concerned with the mystical side of things especially arising from the mystery of death itself. Therefore, we see gods (the god of the river, the rain,...). It is part of man's brain to explain the non obvious. Students of metaphysics know that we are not explaining anything in the universe, we are just perceiving through a lens. How a doctor perceive the illness determines the methods to treat. For instance tuberculosis is a known illness practically everywhere on earth. How a shaman perceives the illness will determine the ways he will amend to heal the ill person. In the same way, how a western physician perceive the illness will determine the prescriptions he will write to heal the ill person.
The bottom line is the concept of God is only a concept. It is different in every culture, time, and space.
So where did the idea of illuminati comes from?
Like the idea of God, it originated from a person who thought there are people manipulating world's events and to control and manipulate people. Well, this concept has existed since prehistoric times. For instance certain knowledge were only conferred to priests, and initiates and not widely known to the general population. The illuminati concept is no greater than the concept of chocolate, ice cream. Like with all concepts, it is only dependent upon time. No concept can survive the test of time, because after all it was just a concept. It had a beginning, therefore an event. Concepts will die when people no longer believe in them.

The truth of it is yes and no. Yes, but in the USA it is the government including the politicians. They are not the ones who say there is no difference between organic and genetically modified foods. That kind of control is to a degree but I am not aware of a central government which runs the world besides the FBI, CIA. The issue of some conspiracy is simply to keep people's minds busy, because the human mind will always be preoccupied about something.
